Bill Easton chooses 8 of his best barrels for his Ascent Syrah. Bill is a huge believe in aging wine and prefers to oversee the process himself to ensure the wines are aged exactly how he wants them. The Ascent spend 23 months in French oak and roughly 2-3 years in the bottle before being released in November of 2021 6 years after the initial harvest. Incredible is an understatement.
